Today I’m sharing a recipe with you that’s near and dear to my heart. You know that I love all things ALOHA. That includes the food. Kalua Pua, or Kalua pork, is one of my FAVORITE things! So I decided to figure out how to make it for my friends, family, and my Chalk Couture team as a treat for all their hard work.
Kalua Pua
Traditionally, Kalua Pua, AKA Kalua Pork, is a whole pig that is cooked in a pit dug in the ground. The pit has hot coals and the pig is wrapped in banana leaves, seasoned with pink salt and flavorings and placed to cook for 24 hours. Those amazing leaves keep it from charring.
I don’t know about you, but I don’t have the time or energy to dig a pit in my backyard. So I decided to utilize my roaster pan to cook up some delicious Kalua pork. Here’s how I did it.
Ingredients:
Boston Butt
Garlic
Himalayan Sea Salt
Liquid Smoke
Banana Leaves (cut and deveined)
Cooking directions:
- Take your Boston Butt cut of pork and trim the excess fat.
- Next you’re going to cut some slits in the top of your cut of meat so that you can put garlic in those slots.
- Peel your garlic cloves and then cut them into decent size chunks.
- Shove the chunks of garlic into the slits you cut in the meat.
- Take a handful of Himalyan Sea Salt and coat the top of the meat. Flip it over and do the same to the bottom. Then turn it back over with the slits you cut facing upwards.
- Pour a little bit of liquid smoke on the meat in and place a few drops in the slits with garlic.
- Wrap the meat in banana leaves.
- Line the roaster pan with banana leaves.
- Place the wrapped Boston Butt in your roaster pan and cook on low for 8-12 hours at 300 degrees.
When I finished my Kalua Pua, we shredded it up and enjoyed it. The banana leaves actually help to give the pork some flavor. It provides moisture and sweetness as your pork cooks low and slow.
I made this same dish for my Chalk Couture team as we were celebrating Chalk Con together.
